Hi There, today, I’m sharing a simple Salad Recipe with you that you can meal prep in advance! This one is simple, yet loaded with flavor and some protein. I hope you enjoy! 🙂
Vegetarian Cobb Salad
Ingredients
- Spring Mix
- Cherry Tomatoes
- White Onion
- Pasture raised, Organic Eggs (I like the Vital Farms brand!)
- salt and pepper to taste
- Healthier dressing, I use Primal Kitchen Non-Dairy Ranch or a light drizzle of organic Balsamic vinegar.
For each individual salad
- Use 2.5 – 3 ounces of salad per salad container. This will allow you to make at least 5-6 salads out of one 16 ounce (1lb) Spring mix.
- Use 1-2 Hard boiled eggs per salad. Each egg may have around 6 grams of protein, so to amp it up you can do maybe at max 2 as to not overpower your salad, bringing that protein count to about 12 grams per serving.
- Add as little or much of chopped onions and tomato as you would like.
- Salt and pepper to taste
- light drizzle of dressing on top!
I recommend washed, organic produce for this recipe!
You can easily prep this salad in advance of the week by boiling up a carton of eggs, washing and drying your salad, and chopping your tomatoes and onions.
You can package each item separately or go ahead and combine all ingredients in salad form in glass or BPA free containers. Place a folded paper towel on top to keep your veggies from getting wet throughout the week. Wait to add your dressing on top until at the time that you eat your salad.
